Guestbooks:
SignMyGuestbook a great place to get a fully customizable free guestbook.
Dreambook a nice guestbook site, where you can have multiple guestbooks. But less customizable as far as adding a layout.
Alxnet a nice guestbook, also forums, polls, and quizzes you can make.

Trackers:
Extreme Tracking looks like a square on your site and when you click it you can find out how many hits you got, how they found your site and more...
SiteMeter looks like a smaller rainbow square (and other options) and gives you just about the same stats.
NedStat looks like a blue square with a little graph on it, gives you a bunch of the same stats as well.
